Tomatoes are packed with the antioxidant lycopene, which has been shown to help prevent just about every cancer out there, including breast, lung and pancreatic. This is one veggie that actually has more nutrients in its cooked form, but I can't imagine cooking summer's juicy heirloom tomatoes when they taste so delicious raw. Just slice and drizzle with olive oil (important, because the oil helps your body absorb the tomato's nutrients) or do a raw pasta sauce of chopped heirlooms marinated in olive oil, garlic, salt, pepper and herbs.
